Build the drink first
A cocktail smoker should add aroma. It should not rescue a weak drink. Make your Old Fashioned the way you normally would, then adjust the smoke around that recipe.
A dependable starting point is bourbon or rye, bitters, and a measured amount of sweetener. Stir with ice until the drink is cold and lightly diluted. Strain it over fresh ice in a heat-resistant rocks glass.
Keep the orange peel nearby, but wait to express it until after the smoke. That keeps the citrus aroma clear instead of sending it out of the glass with the first plume.
Choose the wood
Oak is the easiest first choice. It is balanced and familiar beside bourbon. Cherry brings a softer, slightly sweet aroma. Apple is lighter. Hickory and mesquite are stronger, so use less and keep the burn short.
The wood changes the aroma more than the base recipe. Test one profile at a time. You will learn more from two controlled pours than from mixing several woods together.
Smoke in three short steps
Place the Sapele wood smoker top flat on the glass. Add only a small pinch of dry chips to the steel screen. Keep the torch upright and aim the flame at the chips, not at the wood body or the glass.
- Ignite the chips until they begin producing a steady stream of smoke.
- Stop the flame and let the smoke collect in the glass for 10–30 seconds.
- Lift the smoker top, express the orange peel, and serve.
Stop before the drink disappears
More smoke is not automatically better. The first sip should still taste like bourbon, bitters, and orange. If the glass smells like a campfire before you can smell the drink, shorten the next burn or use fewer chips.
For a second pass, add only a brief touch of smoke. Repeating a short smoke is easier to control than trying to soften an over-smoked cocktail.
Use the flame with care
Adults only. Work on a level, heat-resistant surface in a well-ventilated area. Keep children, loose sleeves, paper, alcohol bottles, and other flammable materials away from the flame. Never leave the torch burning unattended.
Let the steel screen cool fully before removing ash or touching it. The torch ships empty. Use fuel intended for refillable culinary torches and follow the instructions supplied with both the torch and the butane.
